Non-Dairy Mac ‘n Cheese for Baby

Mmm, green mac ‘n cheese!

The other day I was making dinner and needed to come up with something for Olive to eat (usually she eats a modified version of what we eat but this time it wasn’t going to work).

I boiled some whole wheat elbow pasta but didn’t know what I could put on it that would be healthy and safe for her (she is dairy free).

That’s when I remembered this recipe that I had tried and loved, so I modified it for Olive.

Dairy Free Mac ‘n Cheese

(2-3 baby servings)

  • 1/2 c whole wheat pasta (I used elbows)
  • 1/2 avocado
  • optional: dash of garlic powder and basil

Mash the avocado and spices (I didn’t use the spices since Olive loves avocado plain). Mix with pasta. It’s that easy!

Olive loves avocado so much she would probably eat anything covered in it!

    I couldn’t follow the link to the story about your little one being dairy free, but it did not take long into breastfeeding to find I was not allowed to have dairy unless I wanted a screaming baby. This is an awesome substitute! She is not quite ready for macaroni, but we are getting there and this is a recipe we will have to try!

      Oh I know! It was like night and day when I stopped eating dairy. MUCH happier baby!
