Homemade Chocolate Coconut Granola Bars

I love granola bars. They are a quick snack when you are on your way out the door and a healthier alternative when you have a sweets craving. Unfortunately, store bought granola bars are either full of junk or ridiculously expensive (or both!). Since we go through a lot of them I started making my own. Here is one of my recipes:

Chocolate Coconut Granola Bars Recipe

Ingredients:

  • 2 cups of old-fashioned oats (you can substitute 1/2 cup of the oats for 3/4 cup of Rice Krispies for a crispier bar)
  • 1/2 cup oat flour
  • 1/2 cup milled flax seed
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup mini chocolate chips
  • 1/2 cup peanut butter
  • 1/2 cup honey

Directions:

Combine the first 5 ingredients in a mixing bowl.

I’m not very precise with my measuring

Melt the peanut butter and honey in the microwave for 30 seconds. Stir them together to combine.

Pour the peanut butter and honey mixture over the dry ingredients and mix thoroughly. Be sure to get the honey and peanut butter on every piece.

I’m not very precise with these measurements either

Line a 13×9 pan with wax paper. Pour the mixture into the pan and, with another piece of wax paper, push the mixture down into the pan.

When the mixture has been pressed down firmly place the pan in the freezer for about an hour to firm up (this makes cutting the bars easier).
